The year of magical tacos.
A few years ago, I challenged myself to make a different taco recipe every Tuesday. About halfway through I upped the stakes and decided to make a different vegan taco recipe every Tuesday.. Starting the challenge at the beginning of January, I ended my year having made 48 taco varieties. And while I don't have pictures or details on every single recipe, I do have a full list of what I made. Here's the rundown by week:

In case you're wondering, I did make four more weeks of taco recipes to get to 52. The others were:

But what's more is that in the process of taco making, I realized how much I enjoyed having this goal. Something to reach for, something to be working on. For a few years, my personal challenges were fitness-related like tackling my first triathlon or doing the Spartan Beast (and subsequently, the Spartan Super and Spartan Sprint). Last year, it was reading lots of books.
This year, I'm still looking for the one. Ideas are bouncing around but nothing quantifiable. So tell me, what are your goals for 2018?
