Peach cobbler.
I picked up a whole bunch of peaches while I was down in Asbury Park a week ago. A delightfully short little produce season I was pretty excited to hear peach season started early this year due to continual heat waves. Since I don't have a microwave at the moment I couldn't make my favorite peach crisp so I decided to go for a cobbler instead. It went a little something like this:
Ingredients:
- 6-8 peaches
- 2/3 cup light brown sugar
- 1/4 cup butter
- 3/4 cup flour
- 3/4 cup sugar
- 3/4 cup milk (I used soy)
- 2 teaspoons baking powder
- dash of cinnamon
- pinch of salt
Steps:
- Peel and slice your peaches and mix with light brown sugar and set aside.
- In a medium mixing bowl, combine the flour, sugar, baking powder, cinnamon, salt, and milk until on the smooth side.
- Preheat the oven to 350 degrees F and put the butter in the bottom of a 9" x 13" baking dish allowing it to melt while the oven warms up.
- Add the fruit mixture into the baking dish and distribute evenly.
- Pour the batter over the fruit and slide the cobbler in the oven.
Bake for 40-50 minutes or until the cobbler starts to lightly brown and cracks form. Will only keep for a day or two so dish it out warm. Serves plenty.
