This recipe is near and dear to my heart - one of the many kinds of Christmas cookies my beloved Grandma Ann would bake year after year. Luckily, I was smart enough to jot down the recipe before she passed away about 5 years ago. Walnut date cookies are meant to be a little bit dry and a tad crunchy, the perfect complement to coffee or tea (or milk if you're dishing them out for Santa Claus).
Walnut Date Cookies
Ingredients:
- 3/4 cup butter (1-1/2 sticks)
- 1 egg
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 1 cup packed brown sugar
- 2 cups flour
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- dash of cinnamon
- dash of nutmeg
- 1/2 cup coconut flakes
- 1/2 cup chopped walnuts
- 1/2 cup chopped dates
Steps:
- Preheat oven to 350 degrees F. Line a few cookie sheets with parchment or tin foil.
- In a large mixing bowl, combine butter, egg, milk, vanilla and sugar until thoroughly combined.
- Slowly add in the dry ingredients until a sticky down starts to form.
- Fold in the coconut, walnuts and dates until distributed evenly.
- Drop spoonfuls of dough onto the prepared cookie sheets and pop up in the oven for 10-15 minutes (I find 13-14 works best).
Remove cookies once lightly browned and allow them to cool completely (trust me, way better once cooled). Enjoy. Makes roughly 3 dozen.
