Marble cheesecake bites.

I'm going to consider this a work in progress but I figured I'd share cause these are still freakin' delicious. I was prowling the web for inspiration when I came across the recipe for these Marble Cheesecake Squares. After mulling it over for a bit, I decided to be bold and attempt a few alterations. Much to my surprise it worked!

Marble Cheesecake Bites

Ingredients:

  • 2 - 8 ounce packages of whipped cream cheese, softened
  • 1 - 10 ounce container of Cool Whip, softened
  • 2 egg whites
  • 4 tablespoons of sugar
  • 2 teaspoons of pure vanilla extract
  • 1-1/2 ounces of dark chocolate
  • 1 cup of chocolate graham cracker crumbs
  • 2 tablespoons of butter, melted
  • Cooking spray

Steps:

  1. Preheat oven to 325 degrees F.
  2. Coat a 9-inch square baking pan with cooking spray and dump in the graham cracker crumbs.
  3. Drizzle the crumbs with the melted butter and use a fork to combine. Press into the bottom of the pan to form the bottom crust.
  4. Bake the crumbs in the preheated over for about 8 minutes (unless you are me and totally forget this step, whoops). Let this cool.
  5. In a large bowl, beat the cream cheese and Cool Whip together until smooth and fluffy (about a minute).
  6. Add in the vanilla, egg whites and sugar. Beat for another minute or two.
  7. Pour the cheese mixture over the prepared crumb crust and spread into an even layer.
  8. Nuke the chocolate for a minute and a half or so until softened (but not melted). Stir until smooth.
  9. Using the tip of a knife, swirl the semi-melted chocolate into the top of the cheese mixture.
  10. Bake at 325 degrees F for about 35 minutes. Remove from the oven and cool. Chill in the fridge for at least 4 hours.

This is one of those recipes that will taste better the next day so give it amble time to chill out. I split the pan into 16 servings at roughly 180 calories per square.
